Unstuffed Pepper
Do you love stuffed peppers? But if your like me they are time consuming to make. This recipe is basically all the items in a stuffed pepper but made in a skillet. It is a bowl of deliciousness. It is made with brown rice (healthier version), veggies and tomatoes.
This recipe is a healthier version, I am trying to make better dinner choices for my family. I love stuffed peppers but they are time consuming this dinner took about 30 mins to make. It was a big hit with my family.
Ingredients
- 3 peppers diced ( I used 2 green and 1 red)
- 1 small onion diced
- 1 lb of chop meat
- 1 tablespoon of minced garlic
- 1 can (small) diced tomatoes
- 1/4 cup cherry tomatoes diced
- 2 tsp cumin
- 2 tsp paprika
- 2 tsp oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cooked bag of brown rice
- 4 tsp olive oil
- 1/3 cup of shredded cheddar cheese
Directions
- add 1 tsp of olive oil and brown the chop meat, season with salt and pepper in a skillet
- cook your brown rice according to package directions
- after chop meat is cooked add seasonings and mix well, set aside
- add veggies (pepper, onion, garlic) cook until veggies are soft then add cherry tomatoes
- add can of diced tomatoes
- add the chop meat to the veggies and stir well
- add the cooked rice to the mixture and stir well
- add cheese to mixture, put cover on pot for 5 mins to let cheese melt and then mix well
Substitutions
- you can use 1 whole container of cherry tomatoes and omit the diced tomatoes (but I like the taste and consistency of the diced tomatoes)
- you can use turkey meat instead of beef
- white rice can be substituted for brown rice
- 1 tsp of lemon or lime juice can be added also for extra flavor
