Spinach, Artichoke and Chicken Casserole
My dad got me started eating artichokes. I try and add it into as many recipes as I can. This recipe is easy to make and tastes delicious. I added spanish rice as a side dish. Next time I make it I might try and put it over spaghetti or spaghetti squash.This recipe is easy to make and it is delicious.
This recipe tastes similar to spinach and artichoke dip minus the chicken.
Ingredients
2 lbs of boneless chicken breasts
1 package of frozen chopped spinach, drained well
1 jar of artichoke hearts, cut up
1/2 cup mozzarella cheese
1/2 cup parmesan cheese
8 oz cream cheese
1/2 teaspoon of garlic powder
1/2 teaspoon of onion powder
salt and pepper to taste
Directions
- Preheat oven to 350
- I added the spinach to a collander and ran warm water over it until it defrosted then squeezed all the excess water
- add spinach, artichoke, cream cheese, parmesan cheese, garlic powder, onion powder, salt and pepper in mixer. I mixed on low.
- I cut up the chicken into chunks and placed in a greased casserole dish
- pour mixture over the chicken evenly
- bake in oven for 45-60 mins, until the chicken is cooked all the way through (I cooked for 50 mins)
- remove from oven and sprinkle mozzarella cheese on top and put back into the oven until the cheese is melted
- let sit for a few minutes to cool and enjoy!
