Slow Cooker Potato Soup
This Slow Cooker Loaded Potato Soup is thick and hearty, and it is made in the crockpot. I added the scallions to the slow cooker after I added the mix. It came out fantastic. Right before eating, I added some shredded sharp cheddar cheese, and some chopped cooked bacon. Next time I make it I will add some chopped carrots also.
Ingredients
4 cups potatoes, peeled and chopped
3/4 cup chopped onion
4 cups chicken broth
1/2 tablespoon salt
1/2 tablespoon pepper
4 tablespoon butter
1/4 cup flour
1 and 1/2 cup heavy cream
1/4 cup sour cream
shredded cheese, to taste
bacon, to taste
chopped scallions
Directions
- Add potatoes, onions, chicken broth, salt and pepper to slow cooker
- Set it to low for 6 hours or high for 4 hours
- In a saucepan, combine butter, flour, heavy cream and sour cream. Whisk until thickened.
- When the slow cooker is done, pour in the mix. Stir, cover and set the slow cooker to low for another 30 minutes.
- Serve with shredded cheese, bacon and chopped scallions
