Slow Cooker Chicken Cacciatore
This slow cooker chicken cacciatore recipe is a rustic, comforting food that is delicious. This super tender chicken is slow cooked in vegetable juice, diced tomatoes, onions, garlic, mushrooms and Italian herbs. I serve it over white or brown rice. For a change I served it over spanish rice and it was fantastic. The chicken literally fell right off the bone. I am sharing one of my favorite recipes with you today. It has been in my family for generations.
“Cacciatore” means hunter in Italian and was used to name this hunter-style stew. It’s an old, classic Italian dish that dates back as far as the 14th century. To enhance the flavor, I use bone in chicken thighs. It gives it a savorier flavor. The next time I make it I am going to add some chopped carrots also.
Ingredients
Chicken thighs (I used 8)
Chicken drumsticks (I used 8)
small container of sliced mushrooms
1/2 container of Vegetable juice
1 large can of diced tomatoes
2 tablespoons of minced garlic
2 medium sliced onions
1 teaspoon of salt
1 teaspoon of pepper
2 teaspoons of garlic powder
2 teaspoons of onion powder
1 teaspoon of Italian seasoning
1 teaspoon of basil
Directions
- Place the chicken in the bottom of the crockpot
- Add the diced tomatoes, vegetable juice, mushrooms, onions, minced garlic and all spices
- Mix all together in the crockpot
- Cook on low for 6 hours
- I serve it with rice (either white, brown or spanish)
