Greek Chicken Salad

This year for me to eat better, and to stay on track, I have to meal prep. Don’t you love the flavor of Greek foods? This recipe is easy to make and is delicious. You can change it up with different ingredients. I like it with romaine lettuce, you can substitute it with brown rice if you prefer.

2 Recipes in one

  • you will have a marinade for the chicken that is super simple
  • tzatziki sauce- which I think brings the whole dish to life

Ingredients for Greek Chicken

  • 2 lbs of boneless chicken breasts
  • 1/4 cup olive oil
  • 3 Tbsp minced garlic
  • 1/3 cup lemon juice
  • 1 Tbsp red wine vinegar or rice vinegar
  • 1 Tbsp oregano
  • 1/3 cup plain greek yogurt
  • salt and pepper to taste

Ingredients for Tzatziki sauce

  • 1 cup plain greek yogurt
  • 1/2 large cucumber finely diced
  • 2 tsp minced garlic
  • 1/2 Tbsp dill weed
  • 1 and 1/2 tsp lemon juice
  • salt and pepper to taste

Directions for Tzatziki sauce

  • combine the greek yogurt, cucumber, garlic, dill weed, lemon juice, salt and pepper in a bowl and mix well

Salad

  • lettuce (I prefer romaine)
  • 1 tomato
  • 1/2 red onion
  • 1 cucumber

Instructions

  • Combine olive oil, garlic, lemon juice, vinegar, oregano, greek yogurt and salt and pepper- mix well and place into large ziplock bag
  • add diced chicken cutlets to bag
  • massage chicken to make sure it is covered in the marinade for at least 20 mins or up to 12 hours.
  • drain the chicken from the marinade, discard the marinade
  • heat skillet with olive oil and place chicken in
  • cook chicken all the way through about 4-5 mins per side. Time will vary depending on the thickness.
  • remove from pan let cool
  • make the salad: add tomatoes, lettuce, cucumbers and red onion to 4 tupperware bowls

Making the bowls

  • add the salad to the bowls
  • top with chicken
  • top with tzatziki sauce (I put the sauce in a separate container and add it right before I eat it)
  • keep for 3-5 days in an airtight container
