Chicken Cordon Bleu Casserole
This recipe is easy to make and has so much flavor. It has chicken, ham and swiss cheese in a creamy dijon sauce. This recipe is low carb, keto, gluten free and sugar free. Chicken cordon bleu is a dish of meat wrapped around cheese then breaded and fried. With a slice of ham and swiss cheese. The origin is from Switzerland. This recipe is not fried or rolled making it an easy recipe.
Ingredients
- shredded chicken (from a 2 lb rotisserie chicken)
- a little less than 1/2 lb of ham (cut into small pieces)
- 1 stick of butter (softened)
- 6 oz cream cheese (softened)
- 1 tbsp dijon mustard
- half lemon squeezed
- 1/2 tsp salt
- a little less than 1/2 lb of swiss cheese(cut into pieces)
Directions
- Preheat oven to 350. Put the shredded chicken in the bottom of a 13×9 pan.
- layer the ham pieces on top
- Using a mixer, mix butter, cream cheese, mustard, salt and lemon juice
- blend until a thick sauce forms
- spread mixture over chicken and ham
- Lay pieces of swiss cheese on top of sauce
- bake for 30-40 minutes
- I broiled on low for about 2 minutes for the cheese to be golden brown and bubbly at the end. If you do broil do NOT leave it unattended it can burn quickly
Best to serve with
- Green salad
- vegetables such as broccoli or asparagus
- you can serve with rice, pasta or mashed cauliflower
