The best stuffed pepper recipe
This recipe originated from my mom (who unfortunately passed away in 2019). My mom and I used to make it together all the time. It is an easy recipe to make. I’ve had frozen Stouffers stuffed peppers and other people’s stuffed peppers and they don’t even come close to this yummy recipe.
Ingredients:
1 lb of lean chop meat
1 bag of rice, cooked (I use success boil in a bag)
1 large can of tomato sauce
1 tsp of minced garlic
salt and pepper to taste
1 tsp Italian seasoning
1 tsp garlic powder
1 tsp onion powder
sprinkle of sugar
cheese (slices of American Cheese)
peppers (I used 8)
Instructions:
- Brown chop meat in frying pan and drain
- pre-heat oven to 350
- cook rice
- mix rice and chop meat together in a bowl
- add tomato sauce
- add spices
- mix well and set aside
- boil water in a big pot
- cut the tops of the peppers and clean them out
- put the peppers in the boiling water for about 5 mins or so
- remove the peppers and dry them off
- put the peppers standing up in a tray
- add the mix into the peppers to the top
- add a half to 1 slice of cheese to each pepper
- cook at 350 for about 15 mins (until cheese is melted)
- remove from oven and let cool
- enjoy
This recipe can be customized to how many peppers you want to use. Sometimes I double it if I have a lot of people over or if I want lots of leftovers. You might need to adjust the spices to fit your need. I always have some of the filling left and when I eat my pepper, I add some of the additional filling. My son actually doesn’t like the pepper, but he loves the filling.
