Avocado Toast and Omelet
Are you looking for a healthy and easy breakfast? Then look no further. The entire breakfast took me about 10 minutes to complete. It is scrumptious!
Avocado Toast
Toast one piece of bread of your choice. I prefer whole wheat.
- Take an avocado and remove the skin and pit. Try this tool to help with the avocado. Put it in a bowl and mash it. I added pepper to taste, a few squeezes of fresh lemon juice and mixed it well. This will take 2 servings.
- Take about 1/2 of the avocado mix and put in on the toast. Place a few slices of tomato and add some pepper
Omelet
- 2 eggs scrambled in a bowl with 1/4 cup of milk
- add a slice of ham, a few slices of onion, pepper, tomato and mushrooms
- mix all together
- pour it in a heated skillet sprayed with non-sticking spray
- add a slice of cheese (I use either cheddar or american)
- when the sides start to get slightly brown I flip half the eggs over on top of the other side
- Let it cook to the consistency of you liking
- add it to the plate with your avocado toast for a great breakfast
