2 Healthy Breakfast Ideas

Are you looking for some healthy breakfast ideas? I have 2 easy recipes. A western egg omelette and pancakes. The egg omelette is a western omelette that is easy to make and delicious. My pancakes consist of 3 ingredients and are so easy to make.

Western Omelette

To help meal prep, I prepare this ahead of time; I diced 1 green pepper, 1 small onion and some cut up mushrooms and put in a Tupper bowl until ready to use.

Ingredients:

  • 1 green pepper diced
  • 1 small onion diced
  • mushrooms (about 1/4 cup or slightly more)
  • 1/4 cup of shredded cheddar cheese (you can use any cheese or omit the cheese)
  • 2 eggs
  • 1/4 cup of milk

Directions:

  • crack 2 eggs in a bowl and mix with milk
  • add in some peppers, onions and mushrooms
  • add about 1/4 cup of cheese
  • put in a skillet and cook for a few minutes then flip one side over and cook for another 2 mins
  • add salt and pepper to taste
  • you can add fruit, a piece of toast or 1/2 an avocado for a side.

3 Ingredient Pancakes

These pancakes make 2 servings and are crepe style.

Ingredients:

  • 2 eggs
  • 1 banana
  • 1 tsp cinnamon

Directions:

  • place 2 eggs and 1 sliced banana in a blender or ninja
  • add 1 tsp cinnamon
  • blend for about 20-30 seconds (It will be liquidy)
  • use a skillet and make small pancakes (they will be thin, crepe style)
  • cook for a few mins then flip lastly
  • I divide them in 2 tupperware containers (because the recipe is for 2 servings)
  • I add a slice of bacon, sausage or fruit as a side
